The reason is, because Trixie stopped being Trixie once Glimmer happened.
You fell in love with Trixie when she was Twilight's inferior rival. An obnoxious egotistical braggart with no skill to back it up.
There's appeal there because she can improve and become a better person.
But once Glimmer happened...
Trixie stopped trying to be a better person
and just became a walking joke who exists to make Glimmer look good in comparison.
An old and underhanded writer's trick.
Trixie stopped being a dynamic character with potential, because the show became content to say "This is all Glimmer is, This is all Trixie is, and you should accept both as they are now".

I want to make a point and click game where you play as Trixie. I'm Still working on the premise, but I don't know how I'm going to get it off paper. No coding experience or any game dev btw

I think if you get the story and game mechanics you want down on paper you will have done much of the work.
Among the tools (game engines) available today (Unity, Unreal, Mono, Godot, etc) there are some that need next to no coding and some that needs more. Watch a few videos and read a few articles about them and you will find and engine to realize your project in.
The way I see it, story, game assets (graphic, sound) and desired game mechanics (in written form) is most of the work. The game engine is there to stitch that together to do what you envisioned.
