I like ponies, but I only have watched the show casually, so forgive my lack of knowledge on the subject.
As I can see from the show, a god status seems to be attributed to Celestia. Several characters mention Celestia where we would attribute “God” in its place. Now, with Celestia seen to have been defeated and captured on several occasions, whether or not it those were intentional, it is still a defeat in the eyes of the populace who don’t know anything but what they see happening what would happen to the majority belief system if they lost their faith in their ruling goddess? Would the belief system fracture into loyal religions, separatists that worship other gods, or atheists? Would there simply be a reform in the religion? Would there be other cults that spring up in the confusion?
Let’s discuss the different scenarios that we think are likely to happen, and what we would like to see even if it is beyond the realm of possibility.

I think celestia is growing weaker/dying, and chose starlight as her apprentice and made her an Alicorn so that she could soon take her place as supreme being in equestria.

Recognise, also, that any defending Celestia has done was when she had a connection to the elements of harmony (Discord, Tirek, Nightmare Moon). That responsibility has now fallen on Twilight and friends, so it's more accurate to say that Equestria operates under an ideology of harmony amongst ponykind, of which Celestia continues to be a strong proponent.
Furthermore, I feel I have to point out the common misconception that Celestia is meant to be portrayed as some kind of powerful warrior, she is not. Her role as stated from the start is that of a teacher, mentor and leader, roles which do not specifically require any particular skill in combat. In fact, it's obvious that she's averse to combat, but does not shy away from it, even if victory is not guaranteed. Her place in Equestria, the position she excels at is uniting and inspiring ponykind.

Well, from a realistic standpoint I don't see anything actually happening. Equestria loves its leader, and as >>129675 mentioned the key might not even be belief in Celestia as a god figure. Also, it should be mentioned that, so far at least, ponies are differentiated from humans in their ferocity. Where a human would revolt and cause chaos and mdness, a ponie might just do nothing.
Now, if we're willing to sacrifice the above in pursuit of ideas, I have a few that I like. Maybe the nobles have been held in place by the notion of serving a literal god, and start making moves in the darkness when it's proven that they aren't. Maybe some thousand years ago a cult was created around the idea of unrestricted hedonism, and now that the void of a god figure is present they start spreading their ideas around, for better or worse. Even better, maybe a small group of ponies feel irrationally betrayed by the demonstration of Celestia's failures. They form a group to work against her, which is soon countered by a group with the goal of defending her at all costs. Both grow immensely over a few years. The nation is split in two, and eventually it all gets so snarled up that the only choice is civil war.
Again, not to say that these things will actually ever show up, just that I think they're interesting.
