Naruto was the first non-Pokemon anime I ever saw. The sheer depth of it had child-me in awe.

But Gurren Lagann was the first time I felt pure awe, joy, and amazement as a man. That scene where they break out into the surface still gets me.

I also really liked Angel Beats. There's one called Charlotte done by the same people if you're interested, it's one of the best and most feels-inducing animes I've seen in a while.

Serial Experiments Lain started my interest in computers and the Internet when i watched it as a kid

Witch Hunter Robin.

It was probably the first Seinen I watched, and it may have been one of the sparks that really sold me on the slower, more talky, indirect kind of storytelling and thinking that I enjoy so much nowadays.

When i was small i used to watch cowboy bebop, survival island, koni-chan, inuyasha, school of detectives and death note.
watching those everyday affected me someway i guess, but i won't attribute my current personality to silly anime
