Climbing aloe. They start small, you can get them at most major retail garden sections, they're easy AF to keep alive, and when you shave, break a piece off and put it on your face to soothe any irritation/burn. Also works on wounds and actual burns. Careful tho, they can get big. You'll need to repot it every year or two

Are they in moveable pots, or are they in the ground? If in-ground there could be several reasons. Also, what sorta climate are you in?

Ah, well that's a pretty solid explanation. Aloe prefers warmer climates. They're also more drout resistant than they are flood resistant, so try not to over-water. If you can, I'd advise bringing them inside. They also love sunlight. I know that sounds redundant, but you'd be surprised at how many plants will die if they get too much.

Parsley is both pretty and useful.
Just like that you could plant some medicinal herbs, they arent particularly hard to take care of and you'll never run out of tea.
Boldo, mint, thyme, chamomile..
Remember to use fertile soil and give them nutrients once in a while, googling what kind of nutrient each plant needs might be a good idea. Remember, egg shells, letuce and whatever organic leftover you have is good fertilizer.
