Other than the obvious self hosted mail service what options are there with gpg encyption or anything similar?
Is derpymail a consideration at all or it's kind of a joke thing to use? I don't know anything about those affiliates with the site.

Firstly, never ever host your own email service. You don't know what hell is like until you've had your mailserver cracked by Chinese bots because you were late for a security update by only an hour. Leave it to someone willing to tackle that kind of headache full-time.
Second, I assume you're getting into alternative providers under the logic that they'll provide you with better privacy than the big email providers out there. If that's true, you need to know one very important thing.
There is no such thing as an easy solution to private email. Anyone who claims otherwise is a liar and is memeing you. Even if you use another provider that allegedly doesn't scrape your emails for ad targeting and the like, they still have full run of your emails no matter what they may claim to the contrary.
The only solution for private email is to encrypt the messages with something like GPG, and go through the headache of exchanging GPG keys with people you care to hold secure contact with. It's a hassle, it's not one-click, and it's not fun, but that's what you have to do for a fundamentally insecure system such as email.

So really, it just boils down to personal vigilance and how much you're willing to invest in your privacy. Any old email service provider will do. Now, if you want an honest email provider, those are much harder to find. https://cock.li/

Derpymail is pretty neat, has SSL and all you need for extra security is joint files encryption.

Protonmail is high tier for security and privacy.

Shit tier remains Gmail and Outlook.
