Idk, her crawlers aren't capable of precise instructions, but their attacks are acid based, and they damage him by grappling. Maybe I'm grasping at straws, but idk what else to do.
If Posey doesn't cut off and cauterize a head every round for the next three rounds, the Crawlers vanish as her spell expires, and the Hydra wins.

GM, if you want to pause to figure out wtf is going on, I wouldn't blame you. I'm juggling terrain effects, modular damage bonuses, flanking, action economy, 3.5e grapple rules (ugh), save DC mods, underwater AC mods, and three different creatures acting on the same initiative.

A hydra is a beast that can only be defeated with the power of friendship, particularly if your friend has fire/acid attacks and you have a slashing weapon.
Whelp, the page for the amoebic crawler on the forgotten realms wiki won't load (despite having loaded in the past) and it ain't in the SRD. So I think that means the "Vile Touch" ability doesn't exist
